Dorothy "Dottie" Mae Guilbeault, age 72 of Halfmoon passed away on Monday May 6, 2024, at Samaritan Hospital in Troy, NY. She was born on December 21, 1951, in Cohoes, and was raised by her grandparents.

Her true love for cooking blossomed while working at the Golden Fox Restaurant. She then went to the Sticks Restaurant and from there she continued working for the next 23 years at Guiseppe's in Hoosic Falls. She also had a passion for baking. You could only be so lucky to enjoy a sweet treat baked by her. From cakes to the simplest of cookies, if you asked, she baked it.

Dottie enjoyed wood working. Over the years she had made hundreds of things, from birds to reindeer and rocking horses.

She loved spending time with her family and friends. No matter the season, she always had a coffee cup in her hand and a Yankee's ballgame on the television.

She is predeceased by her parents, brother Edward and sister-in-law Mary Lou Guilbeault. She is survived by her brother Richard Guilbeault of Halfmoon and several siblings, many nieces and nephews and friends who became her family.

¬A celebration of life will be held on July 21st, 2024, at Guiseppe's, 3680 NY-7, Hoosick Falls, NY 12090 at 12:30pm to 3:30pm.
